Fluffy Homemade Doughnuts

Ingredients

  • 500g all-purpose flour
  • ✅1 cup milk
  • ✅45g fresh yeast
  • ✅7 egg yolks
  • ✅6 tablespoons sugar
  • ✅25ml vinegar
  • ✅70g melted butter
  • Icing: powdered sugar and milk
  • Decoration: orange zest
  • For frying: rapeseed oil or lard (I used oil)
  • For filling: plum jam and rose jam

Instructions

First, prepare the sponge: mix warm milk, yeast, a teaspoon of sugar, and a tablespoon of flour, cover, and set aside in a warm place for about 20 minutes.
📌 Beat the egg yolks with sugar until fluffy. 📍Then combine the risen sponge with flour, egg yolk mixture, and vinegar. Finally, add melted butter and knead until the dough is smooth and no longer sticky. Cover the dough and let it rest for about 1 hour. It should double in size. 📍Transfer the dough onto a floured surface, sprinkle with flour, and roll out to a thickness of about 1cm. Cut out circles with a glass.
📝 Place the prepared doughnuts on a baking sheet lined with parchment paper, cover with a cloth, and let them rise for about 40 minutes.
➡️ Heat the oil in a pot to about 170°C. Fry the risen doughnuts on both sides for about 2 minutes.
➡️ Use a wooden skewer to flip them during frying. Once fried, remove the doughnuts and drain excess oil on paper towels. ➡️ While still warm, fill them with jam. I use a pastry bag with a long tip.
