Festive Holiday Spice Cookies

Ingredients

  • 3/4 cup of softened butter (170g)
  • 1 cup of brown sugar (220g)
  • 1/4 cup of white sugar (60g)
  • 1 egg
  • 1 egg yolk
  • 1/2 tablespoon of vanilla extract (about 7.5g)
  • 2 cups of flour (280g)
  • 3/4 teaspoon of baking soda
  • 1 tablespoon of cornstarch
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of grated nutmeg
  • 1 cup of candied fruits
  • 1/2 cup of dried cranberries
  • 1/2 cup of sliced almonds

Instructions

  1. Preheat your oven to 180°C (about 350°F).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
  3. Beat in the egg, egg yolk, and vanilla extract until well combined.
  4. In a separate bowl, sift together the flour, baking soda, cornstarch, ground cinnamon, and grated nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Fold in the candied fruits, dried cranberries, and sliced almonds until evenly distributed throughout the dough.
  7. Scoop out portions of dough and roll them into balls, then place them on a baking sheet lined with parchment paper. Make sure to leave some space between each cookie dough ball to allow for spreading.
  8. Flatten each ball slightly with the palm of your hand or the back of a spoon.
  9. Bake in the preheated oven for about 15 minutes, or until the edges are golden brown and the cookies are set.
  10. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  11. Once cooled, serve and enjoy your delicious homemade Christmas cookies
