Easy Orange Cake

Ingredients

  • 1 cup (200g) white sugar
  • Zest of 2 oranges
  • 3 large eggs
  • 3/4 cup (180g) olive oil
  • 1/2 cup (120g) milk or plant-based milk
  • 1/2 cup (120g) freshly squeezed orange juice (from 2-3 oranges)
  • 1 tablespoon vanilla extract
  • 2 cups (280g) all-purpose flour
  • 2 teaspoons baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the white sugar and orange zest. Rub the zest into the sugar with your fingers to release its flavor.
  3. Add the eggs to the sugar mixture and beat until well combined.
  4. Pour in the olive oil, milk, freshly squeezed orange juice, and vanilla extract. Mix everything together until smooth and well incorporated.
  5. Sift the all-purpose flour and baking powder into the wet ingredients. Stir until just combined, being careful not to overmix.
  6. Pour the batter into the prepared cake pan and spread it out evenly.
  7. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes.
  9. After 10 minutes, carefully transfer the cake to a wire rack to cool completely.
  10. Once cooled, you can optionally dust the top with powdered sugar or decorate it with a simple glaze or frosting.
  11. Slice, serve, and enjoy your delicious Easy Orange Cake!
