Easy Orange Cake
Ingredients
- 1 cup (200g) white sugar
- Zest of 2 oranges
- 3 large eggs
- 3/4 cup (180g) olive oil
- 1/2 cup (120g) milk or plant-based milk
- 1/2 cup (120g) freshly squeezed orange juice (from 2-3 oranges)
- 1 tablespoon vanilla extract
- 2 cups (280g) all-purpose flour
- 2 teaspoons baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the white sugar and orange zest. Rub the zest into the sugar with your fingers to release its flavor.
- Add the eggs to the sugar mixture and beat until well combined.
- Pour in the olive oil, milk, freshly squeezed orange juice, and vanilla extract. Mix everything together until smooth and well incorporated.
- Sift the all-purpose flour and baking powder into the wet ingredients. Stir until just combined, being careful not to overmix.
- Pour the batter into the prepared cake pan and spread it out evenly.
- Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes.
- After 10 minutes, carefully transfer the cake to a wire rack to cool completely.
- Once cooled, you can optionally dust the top with powdered sugar or decorate it with a simple glaze or frosting.
