Delicious Lemon Cookie Sandwiches

Let's kick off our lemon series with these delightful Lemon Cookie Sandwiches! 🍋🍪 They're super soft and filled with a luscious lemon cream cheese buttercream. Plus, they're ready in just 10 minutes of baking time! Check out the full recipe below.

Ingredients

  • For the cookies, you'll need:
  • 1 cup (16 tablespoons) of softened unsalted butter
  • 1 1/4 cups of sugar
  • Zest of 2 small lemons
  • 1 egg at room temperature
  • 3 tablespoons of lemon juice (separated)
  • 1 teaspoon of vanilla extract
  • 2 2/3 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • For the Lemon Cream Cheese Buttercream, gather:
  • 8 ounces of softened cream cheese
  • 8 tablespoons of softened unsalted butter
  • Zest of 1/2 lemon
  • A splash of lemon juice
  • 3 1/2 to 4 cups of powdered sugar
  • 2 tablespoons of heavy cream

Instructions

  • Preheat your oven to 350°F and line a large cookie sheet with parchment paper.
  • In a medium bowl, beat together the butter, sugar, and lemon zest until smooth.
  • Squeeze the juice from both lemons you zested, and add 1 1/2 tablespoons of lemon juice to the mixture. Add the vanilla extract and set aside the remaining lemon juice.
  • Slowly add the dry ingredients to the mixture and beat until combined. Chill the dough for 10 minutes.
  • Use a small or medium ice cream scoop to scoop the cookie dough and roll it into balls. Place them on the cookie sheet, leaving about 2 inches of space between each cookie.
  • Bake for 5 minutes, then flatten each cookie with the back of a spoon or measuring cup. Bake for an additional 5 minutes until done. Remove from the oven and transfer the cookies to a cooling rack.
  • To make the frosting, beat the butter and cream cheese together until smooth. Add the lemon zest and remaining lemon juice, then mix in the powdered sugar until smooth. Finally, add the heavy cream until combined.
  • Place the frosting in a piping bag and pipe it onto the bottom of a cooled cookie. Place another cookie on top to create a sandwich. These cookies are delicious on their own too! Enjoy!
