Ingredients

  • For the sponge:
  • 5 eggs
  • 150g sugar
  • 150g all-purpose flour
  • For the filling:
  • 150g chocolate
  • 75g heavy cream
  • 60g whipped cream
  • For the topping:
  • 150g chocolate
  • 75g heavy cream

Instructions

    Start by beating the eggs for 5 minutes in a stand mixer. Add the sugar and beat for another 3 minutes. Then, on low speed (or with a spatula), fold in the flour. This batter doesn't need baking powder; the air bubbles will make it rise. So, fold it in very gently, okay? Pour the batter into a greased 35x25cm rectangular swiss roll pan lined with parchment paper and bake at 180 degrees Celsius (preheated oven) for 20 minutes. Remove from the oven and let it cool for 10 minutes. Meanwhile, prepare the filling: make the ganache. Mix the chocolate with heavy cream and microwave in 30-second intervals until melted. Let it cool and then fold in the whipped cream. Now, flip the sponge onto a clean, damp dish towel sprinkled with sugar. Remove the parchment paper and spread the filling. Roll it up and refrigerate for 1 hour. Then, slice off a portion of the roll and place it on the side. Pour ganache on top and decorate as you like!
