Delicious Cheese Pastry
Ingredients
- For the dough:
- 1 packet (0.6 oz) yeast
- 2/3 cup (150ml) lukewarm water
- 2/3 cup (150ml) lukewarm milk
- 1/3 cup (70ml) oil
- 1 egg + 1 egg white {use egg yolks for brushing}
- 2 tablespoons sugar
- 1 teaspoon salt
- 5 to 5 1/2 cups (750-800g) all-purpose flour
- 2 tablespoons butter
- For the filling:
- Cheese
- 1 egg yolk mixed with a little milk for brushing
- Sesame seeds for sprinkling
Instructions
- In a large mixing bowl, dissolve yeast in lukewarm water and milk. Let it sit for a few minutes until frothy.
- Add oil, egg, egg white, sugar, and salt to the yeast mixture. Mix well.
- Gradually add flour to the mixture, stirring continuously until a soft dough forms. You may need to adjust the amount of flour depending on the dough's consistency.
- Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. Place the dough back into the mixing bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Meanwhile, prepare the filling by grating or crumbling the cheese.
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Once the dough has risen, punch it down and divide it into equal-sized portions, depending on how large you want your pastries.
- Flatten each portion of dough into a circle and place a small amount of cheese in the center.
- Fold the edges of the dough over the filling and pinch to seal, forming a ball or oval shape.
- Place the filled pastries on the prepared baking sheet, leaving some space between them.
- Beat the egg yolk with a little milk and brush the tops of the pastries for a golden finish. Sprinkle sesame seeds on top if desired.
- Bake in the preheated oven for about 20-25 minutes or until the pastries are golden brown and cooked through.
- Remove from the oven and let them cool slightly before serving. Enjoy your delicious Turkish cheese pastries!
