Decadent Chocolate Bottom Cheesecake
Ingredients
- For the crust:
- 1 cup of all-purpose flour
- 1/2 teaspoon baking powder
- 2 teaspoons cocoa powder
- 1/3 cup of sugar
- 100 grams of butter
- 1 egg
- Optional: 2 tablespoons of water
- For the cheesecake filling:
- 1 kg of ground cottage cheese (I used cottage cheese from a container)
- 4 eggs
- 1/3 cup of sugar (add more if you prefer sweeter cakes)
- 100 grams of butter
- 1 packet of vanilla pudding mix
Instructions
- Combine all the ingredients for the crust in a mixing bowl until you get a uniform consistency. You can use a stand mixer with a dough hook or mix by hand.
- Press the crust mixture evenly into the bottom of a 9x13-inch baking dish or a similar-sized pan.
- Preheat your oven to 170°C (about 340°F).
- In a separate bowl, melt the butter and let it cool.
- Beat the eggs with sugar until they become light and fluffy.
- Gradually add the melted butter to the egg mixture while continuously mixing.
- Slowly incorporate the ground cottage cheese and the vanilla pudding mix into the egg mixture, mixing until well combined.
- Pour the cheesecake filling evenly over the crust in the baking dish.
- Bake the cheesecake in the preheated oven for about 75 minutes, or until the top is golden brown and the center is set. Avoid opening the oven door during baking.
- Once baked, let the cheesecake cool with the oven door slightly ajar.
- Once cooled, dust the top of the cheesecake with powdered sugar.
- Serve and enjoy your delicious holiday cheesecake!
