Decadent Chocolate Bottom Cheesecake

Ingredients

  • For the crust:
  • 1 cup of all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons cocoa powder
  • 1/3 cup of sugar
  • 100 grams of butter
  • 1 egg
  • Optional: 2 tablespoons of water
  • For the cheesecake filling:
  • 1 kg of ground cottage cheese (I used cottage cheese from a container)
  • 4 eggs
  • 1/3 cup of sugar (add more if you prefer sweeter cakes)
  • 100 grams of butter
  • 1 packet of vanilla pudding mix

Instructions

  1. Combine all the ingredients for the crust in a mixing bowl until you get a uniform consistency. You can use a stand mixer with a dough hook or mix by hand.
  2. Press the crust mixture evenly into the bottom of a 9x13-inch baking dish or a similar-sized pan.
  3. Preheat your oven to 170°C (about 340°F).
  4. In a separate bowl, melt the butter and let it cool.
  5. Beat the eggs with sugar until they become light and fluffy.
  6. Gradually add the melted butter to the egg mixture while continuously mixing.
  7. Slowly incorporate the ground cottage cheese and the vanilla pudding mix into the egg mixture, mixing until well combined.
  8. Pour the cheesecake filling evenly over the crust in the baking dish.
  9. Bake the cheesecake in the preheated oven for about 75 minutes, or until the top is golden brown and the center is set. Avoid opening the oven door during baking.
  10. Once baked, let the cheesecake cool with the oven door slightly ajar.
  11. Once cooled, dust the top of the cheesecake with powdered sugar.
  12. Serve and enjoy your delicious holiday cheesecake!
