Cheesecake with Mixberry Sauce

Ingredients

  • For the crust:
  • 8.1 oz Digestive biscuits
  • 2.8 oz melted butter
  • For the filling:
  • 31.7 oz cream cheese
  • 12.7 oz granulated sugar
  • 6 eggs
  • ½ cup heavy cream
  • 1 tbsp vanilla extract
  • Lemon zest
  • 3 tbsp all-purpose flour
  • For the mixed berry sauce:
  • 10.6 oz mixed berries (strawberries, blackberries, blueberries, whatever you like)
  • 1 cup sugar
  • Juice of ½ lemon

Instructions

    Let's start with the crust. Crush the biscuits until fine, then add the melted butter. Press the mixture into a 9-inch pan and bake at 350°F (180°C) for 10 minutes. Remove and let it cool. Now, onto the filling: beat everything in a mixer, adding the heavy cream last. Once it's smooth, add the fresh cream. Mix well and pour it into the pan. Important: cover the bottom with aluminum foil to prevent the biscuit from getting moist with the water bath. Place it in a larger pan and pour in hot water. Bake at 300°F (150°C) for about 1 hour or until the top is golden and the cheesecake is firm. Let it chill in the fridge covered with plastic wrap overnight or for 4 hours. Meanwhile, make the berry sauce: put everything in a saucepan and stir occasionally until it reduces and becomes a beautiful jam. Set aside and use it later on the cheesecake! Decorate as you like and enjoy!
