Cannoli Cookie Cups

These tasty treats are packed with flavor and are super easy to make

Ingredients

  • Cookie Cup:
  • 1 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 1/4 cups packed brown sugar
  • 2 large eggs, at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup chocolate chips
  • Cannoli Frosting:
  • 1 1/2 cups whole milk ricotta cheese, strained
  • 8 ounces mascarpone cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup mini chocolate chips, plus additional for topping
  • Optional: chocolate drizzle (melt a 4 oz. chocolate bar)

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium bowl, combine the melted butter with both sugars, mixing on low speed until smooth. Add the eggs and vanilla extract, and mix until well combined.
  3. In another bowl, mix together the flour, baking soda, and salt. Slowly add the flour mixture to the wet ingredients, about 1/2 cup at a time, mixing until fully incorporated. Fold in the chocolate chips.
  4. Spray muffin pans with baking spray. Using a medium ice cream scooper, scoop the cookie dough into each muffin cup and press down to create a cavity in the center of each cookie. Bake for 16-20 minutes.
  5. While the cookie cups are baking, prepare the cannoli frosting. In a mixing bowl, combine the strained ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, and mini chocolate chips. Beat until smooth, then transfer the frosting to a piping bag and chill in the fridge until needed.
  6. Once the cookie cups are done baking, remove them from the oven and let them cool for about 25-30 minutes.
  7. Once cooled, pipe the cannoli filling into each cookie cup and sprinkle with additional mini chocolate chips. Optionally, drizzle with melted chocolate for an extra indulgent touch. Enjoy your delicious Cannoli Cookie Cups!
