Banana Bread with Almonds

Ingredients

  • 3 ripe bananas
  • 3 large eggs (about 170g)
  • 1/4 cup of sugar or sweetener (adjust to taste)
  • 1/4 cup of vegetable oil (about 60g)
  • 1 teaspoon of vanilla extract
  • 2 cups of almond flour (about 320g)
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 2 teaspoons of ground cinnamon
  • For decoration:
  • Slices of banana
  • Sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray.
  2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  3. Add the eggs, sugar, vegetable oil, and vanilla extract to the mashed bananas, and mix well until fully combined.
  4. In a separate bowl, whisk together the almond flour, baking powder, baking soda, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Arrange banana slices on top of the batter and sprinkle sliced almonds over the bananas.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes.
  10. After cooling slightly, transfer the banana bread to a wire rack to cool completely before slicing and serving.
