Banana Bread with Almonds
Ingredients
- 3 ripe bananas
- 3 large eggs (about 170g)
- 1/4 cup of sugar or sweetener (adjust to taste)
- 1/4 cup of vegetable oil (about 60g)
- 1 teaspoon of vanilla extract
- 2 cups of almond flour (about 320g)
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 2 teaspoons of ground cinnamon
- For decoration:
- Slices of banana
- Sliced almonds
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray.
- In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
- Add the eggs, sugar, vegetable oil, and vanilla extract to the mashed bananas, and mix well until fully combined.
- In a separate bowl, whisk together the almond flour, baking powder, baking soda, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Arrange banana slices on top of the batter and sprinkle sliced almonds over the bananas.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes.
- After cooling slightly, transfer the banana bread to a wire rack to cool completely before slicing and serving.
